Canned Coconut Milk is having more than a moment. Loved by paleo dieters, vegans and foodies alike, the canned stuff can mimic milk and cream in recipes, from soup and curries to yogurt and ice cream, adding a rich milky texture without added dairy. After the coconut water is retrieved from the nut, it is de-shelled and the brown skin shaved-off. After cleaning the white flesh with hot water steam, it is grinded and freshly pressed with a screw press. The raw Coconut Milk is then homogenized, filled in BPA free cans and sterilized. The whole process does not take more than 2-3 hours which is important to keep the freshness of milk.
